Food Preparation: Nicoise Salad

Ingredients for salad
- 80g fresh tuna
- 2 new potato
- 6 Green beans
- 4 Cherry tomatoes
- 4 Olives
- 4 capers
- 2 anchovy
- Chives
- Mixed lettuce leave
- 1 Boiled egg
- 1/8 Red onion
Method for salad
- Boil potato then cut in halves and season with salt and pepper
- While potato is boiling, steam the green beans
- Boil the egg until hard…but not blue
- Season and rub the fish with olive oil, then sear the fish
- Dice onion
- Arrange the salad
Ingredients for dressing
- 30ml white wine vinegar
- 30ml lemon juice
- 80ml olive oil
- 1/2 clove garlic
- 1tsp Dijon mustard
- 1 tsp chopped parsley
- Pinch of freshly chopped tarragon
- Salt and black pepper
- 1tsp honey
Method for dressing
- Blend all ingredients well until emulsified
- Please note the following: you can plate this salad any way you like. Dress all the components.
