Ingredients for salad

  • 80g fresh tuna
  • 2 new potato
  • 6 Green beans
  • 4 Cherry tomatoes
  • 4 Olives
  • 4 capers
  • 2 anchovy
  • Chives
  • Mixed lettuce leave
  • 1 Boiled egg
  • 1/8 Red onion

Method for salad

  1. Boil potato then cut in halves and season with salt and pepper
  2. While potato is boiling, steam the green beans
  3. Boil the egg until hard…but not blue
  4. Season and rub the fish with olive oil, then sear the fish
  5. Dice onion
  6. Arrange the salad

Ingredients for dressing

  • 30ml white wine vinegar
  • 30ml lemon juice
  • 80ml olive oil
  • 1/2 clove garlic
  • 1tsp Dijon mustard
  • 1 tsp chopped parsley
  • Pinch of freshly chopped tarragon
  • Salt and black pepper
  • 1tsp honey

Method for dressing

  • Blend all ingredients well until emulsified
  • Please note the following: you can plate this salad any way you like. Dress all the components.
