FOOD PREPARATION: GRILLED FISH AND RICE

Recipe: Grilled fish with lemon butter and savoury rice

Ingredients for grilled fish

  • 1 hake fillet
  • Salt and pepper to taste
  • ¼ tsp Cajun spice
  • ¼ tsp chopped fennel and dill
  • 1tsp butter
  • 1tbsp oil
  • Seasoning

Method

  1. Heat the pan until it starts to smoke
  2. Add the butter and oil
  3. Place the hake away from you, skin side down
  4. Grill until cooked turning only once

Ingredients for sauce

  • 100ml cream
  • 1 clove garlic
  • ½ lemon

Method for sauce

  1. In a pan add the butter and heat
  2. Squeeze the lemon juice in the pan
  3. And the garlic
  4. Add the cream and simmer

 

Savoury rice

Ingredients 

  • ¼ onion
  • 50g long grain rice
  • 1 cinnamon stick
  • 2 mushrooms
  • 1tbsp butter
  • 1 bay leaf
  • ¼ red pepper
  • ¼ tsp turmeric
  • 2tbsp frozen peas

Method Savoury rice

  1. Wash and boil rice until cooked, add in the salt, turmeric, cinnamon and bay leaf
  2. Cube veg and fry in butter
  3. Once cooked mix the veg with the rice
