Recipe: Grilled fish with lemon butter and savoury rice

Ingredients for grilled fish
- 1 hake fillet
- Salt and pepper to taste
- ¼ tsp Cajun spice
- ¼ tsp chopped fennel and dill
- 1tsp butter
- 1tbsp oil
- Seasoning
Method
- Heat the pan until it starts to smoke
- Add the butter and oil
- Place the hake away from you, skin side down
- Grill until cooked turning only once
Ingredients for sauce
- 100ml cream
- 1 clove garlic
- ½ lemon
Method for sauce
- In a pan add the butter and heat
- Squeeze the lemon juice in the pan
- And the garlic
- Add the cream and simmer
Savoury rice
Ingredients
- ¼ onion
- 50g long grain rice
- 1 cinnamon stick
- 2 mushrooms
- 1tbsp butter
- 1 bay leaf
- ¼ red pepper
- ¼ tsp turmeric
- 2tbsp frozen peas
Method Savoury rice
- Wash and boil rice until cooked, add in the salt, turmeric, cinnamon and bay leaf
- Cube veg and fry in butter
- Once cooked mix the veg with the rice
