Ingredients for salad

  • 1 chicken breast
  • Seasoning
  • Cos lettuce
  • 1 rasher bacon
    • 1 slices white bread
    • 20g Parmesan shavings
    • 1 egg

Method for salad

  1. Season chicken and grill or pan fry then set aside
  2. Cut bread into cubes drizzle with olive oil and season then bake until golden brown
  3. Fry bacon and chop up into chunky pieces
  4. Boil egg until a medium soft
  5. Put salad leaves into bowl
  6. Slice chicken and place on leaves
  7. Put croutons and bacon on top
  8. Cut boiled egg in quarters and place on top allowing yolk to ooze out
  9. Sprinkle with parmesan
  10. Pour dressing over and serve

Ingredients for dressing

  • 1-2 cloves garlic
  • 1tsp heaped mustard
  • 3 anchovy fillets
  • 2egg yolks
  • 1 tsp Worcestershire sauce
  • 1tbsp grated parmesan cheese
  • Pinch salt
  • Freshly ground black pepper
  • 60ml olive oil

Method for dressing

  • Combine garlic, mustard, Worcestershire sauce, parmesan and anchovies in a blender and mix
  • In a slow stream add olive oil through hole in lid.
  • Scrape dressing with spatula into a bowl and season to taste with salt, pepper
